Grilled Veggie Ratatouille

I made this dish as a side last week with some burgers I made on the grill. I love zucchini, summer squash and eggplant in any form. For me the problem is how watery they all get when cooked together. So before I put this all together, I cut up the Eggplant, sliced it up and sweated it for a couple of hours before I grilled it. It made for a much better Ratatouille. In the picture you can see that I did not top it with cheese yet. You can have it either way you like it. Some like it with cheese some do not. I also included the instructions on how to sweat the eggplant, so your dish will not get watery.
