Zucchini Pie


This recipe comes to me from a friend named Patrice. (Hi Pat!) This was one of her most requested recipes for our holiday luncheon that we do every year at work. I must add that it is delish!

Zucchini Pie

4 zucchini sliced thin

1 med onion diced

2 cloves garlic minced

½ cup olive oil

3/4 cup parm cheese

3 eggs

2 cups bisquick

Salt & pepper

Preheat oven at 350

Combine all ingredients and pour into a 9 x 12 baking dish or disposable aluminum baking pan sprayed with cooking spray.

Bake 45-50 min or till firm & browned

Substitute for Parmesan:

Cheddar & jalapeno peppers

Salami & parm cheese

Provolone & diced ham

Swiss & diced ham

White Cheddar & shredded chicken
