Flourless Peanut Butter Chip Brownies

Flourless Brownies

These are AMAZING brownies. No one will ever believe that they have absolutely no flour of any kind in them! They are 100% gluten free AND only 140 calories per serving. I made these with Peanut Butter chips and Pecans but you can top them with whatever your heart desires. I'm thinking the next time I make these, I am going to do toasted coconut and almond slivers! Tell me that doesnt sound great! These are so moist that you really should put them in the fridge so they do not get mold on them in a few days.

Flourless Brownies

Ingredients:

1 (14oz) can of black beans, rinsed and drained

2 large eggs

1/2 cup cocoa powder 3/4 cup sugar

1 tsp oil

1 tbs almond milk or whatever milk you use

1 tsp balsamic vinegar 1/2 tsp baking powder 1/2 tsp baking soda 1/2 1 packet instant coffee

(Optional) ½ cup Topping, peanut butter chips or toasted coconut, mini M&Ms, or plain chocolate chips, whatever you want to use

(Optional) ¼ cup nuts - I used crushed pecans

Directions:

Preheat oven to 350 F. Grease a nonstick 9 x9" square baking pan with baking spray.

Blend the black beans, eggs, cocoa powder, sugar, oil, milk, balsamic vinegar, baking powder and soda, and coffee in a food processor or blender until smooth. Pour brownie batter into prepared pan. Sprinkle chocolate chips over the top of brownies.

Bake the brownies until a toothpick comes out clean about 30 minutes. Allow to cool completely before cutting into squares.
